This version of cinnamon bread is perfect for a side breakfast treat or dessert. It goes along well with coffee, tea, or any hot drink. Here is how to make cinnamon bun bread.

Serves: 4-6

Ingredients

  • 1 1/2 cups (190g) all purpose flour

  • 1/3 cup (70g) sugar

  • 1/4 teaspoon salt

  • 4 teaspoon active dry or rapid rise yeast

  • 2/3 cup (155 ml) warm milk

  • 3 tablespoons vegetable oil

  • 1/2 teaspoon vanilla extract

  • 1 large egg

Filling/Topping

  • 3 tablespoons (45g) butter, room temperature

  • 3/4 cup (165g) brown sugar

  • 1 teaspoon ground cinnamon

Icing

Steps

  1. Lightly grease an 8×8 inch (20cm) square baking pan. Use margarine or non-stick cooking spray.

  2. Mix the flour, sugar, and salt in a large bowl.

  3. Combine the warmed milk and yeast in a measuring cup. Dissolve the yeast completely.

  4. Add the yeast-milk mixture, egg, vegetable oil, and vanilla extract to the flour mixture. Mix together thoroughly.

  5. Pour the mixture into the baking pan. Set aside for at least 15 minutes.

  6. Make the topping. Stir together the brown sugar, butter, and cinnamon together until you have a crumbly mixture.

  7. Sprinkle the topping over the pan mixture. You can either swirl it in or lightly press it down.

  8. Place the pan in the cold oven. You’ll be baking it while the oven is preheating. Bake the mixture for 30 minutes at 350ºF/180ºC.

  9. Check for doneness. The cinnamon bread should spring back when lightly pressed. Set aside to cool for 30 minutes.

  10. Make the icing by whisking the milk and powdered sugar together. Drizzle the icing on top of the bread.

  11. Serve the cinnamon bread warm. Any leftovers can also be reheated in the microwave for a few seconds.
